-Butterfly a chicken breast (or thinly pound it), season both sides with salt, pepper and mexican seasoning.
- Heat a pan (preferably cast iron) with 1 table spoon of any neutral flavoured oil. --Sear the chicken breast for 2-3 minutes on each side (time varies with the thickness of the chicken breast and flame being used).
-Once fully cooked, switch off the flame add a slice of cheese of your choice and cover with a lid to get the melting action going.
- After a minute or so, remove the chicken breast from the pan and fry an egg.
-Assemble the chicken breast and egg with the toppings of your choice on a wheat bun or a regular bun.
The toppings I used were quickled onions, spicy cilantro mayo, tomatoes, lettuce and jalapeños.
Quickled onions: Thinly slice an onion. In a bowl, add onions, pickle juice from a jar of jalapeños and water. After about 5-10 minutes, drain the liquid and rinse the onions. I would recommend to do this as the first step.
Spicy Cilantro Mayo: To a heaping spoon of mayo, add half a lemon juice, salt, pepper and a spoon full of chopped cilantro. Add a dash of hot sauce.
