Vegetable Fried Rice and Vegetables in Garlic Sauce #homemade #recipe
Vegetables in Garlic Sauce
-1/2 of each, green, red and yellow bell pepper
-1 onion
-4-5 spring onions
-10 cloves of garlic-minced
-1" piece of ginger, minced
-1/2 head of broccoli and its stem
-4-5 baby corns, sliced or halved
-4-5 leves of bok choy
-2 tbsp soy sauce
-1 tbsp rice vinegar
-1 tbsp any hot sauce (preferably szechuan sauce)
-1 tbsp honey (optional)
-1 tbsp + 1 tsp of corn starch mixed in 1 tbsp + 1 tsp of water
-water - 2 cups
-2 tbsp of oil

-In a wok or kadhai, heat oil and add all the vegetables including ginger and garlic.
-Add salt and saute for about 3-4 minutes on high.
-Mix soy sauce, honey, vinegar, hot sauce in a bowl with salt and pepper and add it to the vegetables and mix well.
-Add water and let it cook for until the vegetables are cooked. **I don't like to soften my vegetables, I like them crunchy**
-Add the corn starch and let it boil to activate the corn starch.

Fried Rice
-4 cups cooked (boiled) rice.
-2 cups chopped assorted vegetables of your choice.
-5 cloves of garlic, minced
-1" piece of ginger. minced
-2 tbsp soy sauce
-1 tbsp vinegar
-2 tbsp oil
-salt and red chilli flakes to taste

-In a wok or kadhai, heat oil.
-Add all the vegetables including ginger and garlic.
-Saute for about 3-4 minutes.
-Add salt, red chili flakes, soy sauce and vinegar and mix well.
-Add cooked rice and keep stirring until everything is mixed well.
-Garnish with green parts of spring onions and enjoy.
