French onion & tomato tarts
The magic of simplicity works always.. a crispy and tangy tea time snack or can be served as and appetizer for a dinner party.

Made, "FRENCH ONION & TOMATO TARTS"...

yummy tarts made with home made puff pastry, filled with caramelised onion and cherry tomatoes..


French onion & tomato tarts :

Puff pastry :

Maida - 2 cups
Butter - 1/2 cup (at room temperature)
Butter - 1/2 cup (cut into cubes)
Water - 1/2 cup
Salt - 1 tsp


1. Rub the butter cubes into the maida mixed with the salt.
2. Add the mentioned amount of water and make a dough.
3. Cover this dough with a cling film and let it rest for few minutes.
4. Now spread the remaining 1/2 cup of butter on a butter paper in such a manner that it shapes like a rectangle.
5. Fold the sides of the butter paper to seal the butter and chill it in the fridge so that it hardens but still malleable to work with.
6. Now roll the dough in a rectangular manner.
7. Remove the cold butter from the butter paper and place it in the center on the rectangular dough.
8. Now fold the end overlapping each other. Turn the dough 90 degrees and roll it.
9. Now fold the dough again by overlapping the ends to form a book like shape.
10. Chill in the fridge and repeat the rolling and folding procedure thrice.
11. Now divide the dough and desired equal parts and chill in the fridge. Use when required.


For the tarts :

Onions (cut into rings) - 2
Wine tomatoes (halved) - 6
Pepper (crushed) - 1/2 tsp
Salt
Sugar
Olive oil
Stock (I have used chicken stock) - 1/4 th cup


1. Heat a heavy bottomed pan with olive oil.
2. Now add the onions and saute till almost browned.
3. Then add the pepper powder, salt and sugar. Give it a mix.
4. Once the onions are caramelised, add the stock and let it simmer.
5. When stock is almost dried up, add the tomatoes and stir well.
6. Give it a mix and keep and keep aside to cool down.


Assembly :
Cut out rounds of the puff pastry sheet.
Put some caramelised onion mixture on top.
Top it up with cooked tomato halves.
Bake these for 20 minutes in a preheated oven at 200 degree Celsius. Serve.
