Ingredients : Mutton 1kg, Fresh Methi leaves 1 bunch (I have used frozen since methi is not available here in Stockholm), 2 large onions finely chopped, 2 large ripe tomatoes, 4 to 5 cloves of garlic, 2 inch ginger chopped.
Powder spices : 2tsp turmeric powder, 1tbsp kashmiri red chilli powder, 1tbsp coriander powder, 2tsp garam masala and 2tsp meat masala (optional).
Whole spices : cloves, bay leaves, mace, cardamon.
Heat oil in a pan and to it add the whole spices and the onion. Sauté it till it starts getting brown.
Make a paste of tomato, garlic and ginger in a blender and add it to the onion and cook it till oil gets separated.
At this stage add the powder spices and mix well.
As the masala starts sticking to the bottom of the pan add a little water and bhuno it till oil gets separated. Repeat this for 2 to 3 times. Till it looks like this.
Add mutton to the masala and mix well.
Bhuno the mutton for 10mins. Adding little water each time abd cooking it till oil gets separated.
Add the methi leaves and mix well.
Transfer the whole into a pressure cooker and add 2 cups of water. Cover the cooker and cook it till 2 whistles. Remove it and let the steam escape of its own.
Place it again on the flame and cook till gravy reaches desired consistency.
